Gluten Sucks, This Doesn't: Against the Grain Gourmet Gluten Free Rolls

Why So Obsessed?

These rolls. Oh my god these rolls. I can't even keep them in my apartment because I will drunk-eat an entire bag in one sitting. CAN'T STOP ME. (Unless there's nachos. Nachos might stop me.)

It seems Against the Grain has figured out the secret to gluten free bread that FEELS like bread. And the secret is named.... Mozarella Cheese. (Though I'm positive I'm completely over-simplifying some super scientific process that's the REAL secret. Full ingredient lists here.) In the gluten free roll/bread department, I can't think of a single product that would compare. These rolls are SO moist and chewy, and not the least bit crumbly. You literally will want to poke the insides after cutting one open.

To prepare them, take one roll straight from the freezer and microwave for 20 seconds or so, until it's soft enough to slice open. If the inside is still a little cool after you slice it, you can nuke it again. (I suppose you could also thaw the rolls at room temp, but I never think that far ahead. And they're quite amazing warm.)

Here I topped the rosemary roll with butter, salt and pepper, and the pumpernickel roll with whipped cream cheese and fresh chives. (Turns out these are the perfect cream cheese vehicles - you may not even miss bagels.)

So Where Can I Get It?

I buy mine in the gluten free freezer section of ShopRite for $6.99 a pack (and each pack comes with 4 rolls). Trust me when I tell you they are worth every penny. Just keep them hidden from your non-Celiac little sister ;)

There's a handy store locator on the Against the Grain website, which you can find here. Looks like they're carried by the Whole Foods stores on NYC, as well as Fairway and some of the smaller health-food stores.

PS. You'll be pleased to know that they're pup-approved:

Past Gluten Sucks, This Doesn't Features:
Schar Parbaked Ciabatta Rolls - not as decadent, but a great lighter alternative to Against the Grain

    1. oohh is that different than pan de bono?

saw that you live in BK! you HAVE to go to Big Booty Bread Co on 23 b/w 7th and 8th in Manhattan. I'm totally addicted to their pan de yuca (which they also call 'cheese rocks').
